These yeast-free & gluten-free cinnamon buns are a delicious treat on a weekend morning. Make a double batch and freeze some of them to have on hand for busy mornings. They are delicious sliced in half and reheated in a toaster oven!

Preparation Note

You'll need to cook 1 medium sweet potato for this recipe. You can use a whole baked sweet potato (peeled), or peel and cube a sweet potato and place the cubes into a steamer basket. Steam for about 20 minutes, or until tender.

1½ cups teff flour
½ cups tapioca flour
2 teaspoons cinnamon
2 teaspoons baking powder
½ teaspoons baking soda
¼ teaspoons fine sea salt

1 cups mashed & cooked sweet potatoes
¼ cups maple syrup
¼ cups extra virgin olive oil
¼ cups water
2 tablespoons whole psyllium husks
