Peach Ginger Mint Green Smoothie

This fresh, summery smoothie will quench your thirst and rejuvenate your cells! My ingredients veer a little from the smoothie ingredients we typically use. This one makes use of all of the produce (except ginger) you can find at your your local Farmer's Market or food co-op right now! Since I have a smoothie recipe for winter, spring, and autumn, I thought a summery green smoothie recipe was in order. You can check out my Super Antioxidant Smoothie which does use summer produce (but it's not green!).

This recipe can be used during the Detox Phase (phase 1) and all phases of our Elimination Diet. Also, since it doesn't have citrus, it is a great first smoothie for older babies! We've been teaching our baby to drink from a cup by giving her little bits of liquid in tiny glasses (bought from Goodwill) since she was 8 months old. We started with water or fresh coconut water and now she can drink a smoothie out of a plastic sippy cup needed!

If we give our children the opportunity to learn how to use regular silverware and cups from the beginning, they learn pretty quickly, and all of those baby products you thought you needed become obsolete. Sure, I bought plastic spoons, cups, and bowls with my first baby, even though in the back of my mind it didn't feel quite right. We gave them all away years ago and now that I understand the dangers of using plastic, there is no way I would ever purchase these things again. Babies and toddlers can use small ceramic or glass bowls, wooden bowls, wooden silverware (for young babies), small stainless steel silverware (for older babies), and small glass cups instead of plastic sippy cups.

Peach Ginger Mint Green Smoothie

I recently bought a box of the most amazing organic peaches from Smallwood Farms so I have been using them in everything. If you don't have peaches use plums, apples, pears or a mixture of frozen blueberries and cherries instead. If you want to make this more refreshing on a hot summer afternoon, add a few handfuls of ice cubes to the blender and blend again. I like to use this smoothie as a late afternoon pick-me-up. Neither Tom or I really handle any caffeine, so green smoothies are our natural energizing drink! Add a squeeze of lime to each serving if desired.

3 large peaches, pitted
2-inch piece fresh ginger
1 small bunch bok choy
1/2 bunch kale
1 medium cucumber
large handful fresh mint
2 to 3 cups water

Place all ingredients into a Vitamix or other high-powered blender and blend until smooth. Add more water for a thinner smoothie. If it is too bitter, add another piece of fruit or liquid stevia to taste.

  3. Looks super tasty! We also taught our kids to use regular glasses and sippy cups. Much better for them.

  4. In my grocery store, Kale is sold in really large bunches. I'm not sure if 1/2 bunch of that would be too much. Are you able to provide a comparison to approximate cups? Thanks so much for the wonderful recipes. I can't wait to try this. Now I just need to go "steal" some mint from my neighbor's herb garden!

  5. Wonderful looking recipe--can't go wrong with those ingredients. And I love the motivation to get away from giving plastic dinnerware to my 15 month old. We never did the sippy cup because he learned how to drink from a straw at 8 months old--when I first started giving him green smoothies! But, his straw cup is plastic. We are working on teaching him not to throw his cup on the floor when he's done with it, but it's been a slow process. I can't imagine using glass while he's still in this phase, but the plastic still feels wrong. I love the picture of your daughter drinking from the glass, no shirt/bib but green smoothie dribbling down her face. It really is motivation to lighten up with my son about messes and let him have at it with a (small, thick, handled) glass... as long as he doesn't throw it!

  6. Micki - I would try 3 to 4 kale leaves to start, blend and then taste it to see if it could use more. And...I am sure your neighbor won't mind if you some mint! The mint is overtaking my herb garden this year....wish someone would come "steal" some of mine! ;-)

  7. I have a question about plastics, as you mentioned them in your post. I saw that you recommend the Vitamix on your site - do you have a glass pitcher for it? I have looked around but have not been able to find one.

  9. I just got back from our local farmers market (which is actually quite large) and no one had any bok choy. So I stopped at the supermarket on the way home and they didn't have any bok choy either. What would you suggest I use in its place? Thank you.

  10. Hi Ali, I love your recipes and (as of today) own both Nourishing Meals and the revised Whole Life Nutrition Cookbook!

    I'm wondering what your opinions are on freezing smoothie portions for later consumption... Would they be less nutritious than a fresh smoothie?

  11. Could you clarify the serving size? You mentioned the recipe makes 6 cups. How many people does this serve?
