I began writing this book in 2010 because I wanted a resource for parents to be able to raise children who could thrive in a time of ever-increasing rates of chronic childhood diseases and disorders. Not only did I want this to be a cookbook, but a guidebook for raising healthy children. I wanted to simplify the wealth of data out there and compile it into a usable resource for other moms just like me. Feeding your children a diet of homemade nourishing foods plays a big role in their development and resistance to disease. But it is not the only factor. I decided to take the current research and combine it with what we were already doing with our children and distill it down into a few easy to read chapters.

It doesn't have to be this way!

As parents we are all trying to do the best we can, raising our children to be the healthiest they can be. Sometimes there are hidden weak links in us as parents that can lead our children to be more susceptible to certain diseases. It can take some research and investigative work to figure out where those weak links are. Is it an imbalance in the microbiome (the colonies of bacteria, yeasts, and archaea living in our guts)? Is it a genetic weak link that does not allow for proper detoxification of the toxins from our environment? Is it a nutrient deficiency? Is it a constant toxic exposure? Impaired digestion? An undiagnosed gluten sensitivity or celiac disease?

There are many contributing factors that are part of this rising epidemic of non-communicable childhood diseases, not any one cause. It is, in fact, a global problem. How we all choose to live our lives, how large corporations behave, and how our government acts (or doesn't act) all affect each and every child on this planet. Numerous scientific research articles are pointing to the over 80,000 chemicals in the marketplace today as a large contributor to this epidemic, many of which have not been tested for human safety or long term exposures. In Nourishing Meals, you will find information on reducing your chemical load. There are easy steps you can take as a family such as getting rid of air fresheners, dryer sheets, and scented candles (essential oil scented beeswax candles are ok). You will also find information on ways to help you and your children detoxify from the ever-increasing toxic load we humans have, such as eating more raw cruciferous vegetables, sweating, eating fermented foods, as well as having the nutrients needed for detoxification.

Other contributors to this epidemic of childhood disease includes your child's genetics, epigenetics, and even what the child's grandmother was exposed to (toxins as well as nutrient deficiencies). Alterations in a child's gut, the lack of beneficial microbes, or existence of too many harmful microbes are contributors as well.

We like to think of disease like this: Too many irritants, and not enough nutrients.  With this thought in mind, you can jump in and begin to help your family by reducing some of the chemicals that can be controlled, both through supporting detoxification as well as by limiting exposures. At the same time, you can support your family by increasing the amount of nutrients coming in through an increase in nourishing whole foods, through supporting the digestive system, and through supplementation if necessary. I have five children all of whom we've raised from pre-conception onwards using the principles and types of recipes found in Nourishing Meals. Four out of five children have never had antibiotics! In fact, we've only used antibiotics once in over 14 years of raising our children! They don't get ear infections, strep throat, or other common childhood illnesses. Yes, they get the common cold and flu bugs that go around, but we think of these as training for the immune system. Although my second daughter has a sensitivity to gluten, and our family is gluten-free, none of them have any food allergies or any environmental allergies such as to pollen, dust, or animals.
