This scrumptious gluten-free, grain-free, sugar-free, and dairy-free coffee cake recipe comes from Kelly Brozyna's new cookbook, Grain-Free Baked Goods and Desserts! It is one of those recipes that is nutritious enough to stand alone at breakfast time, though I prefer to serve it with a Green Smoothie! It is filled with cooked white beans, coconut flour, eggs, and a little honey and stevia! My children love this recipe and as the neighbor girl who was visiting today said, "I can't believe this is gluten-free, it is so good!"
As a kick-off to the giving season, I have one signed copy of her book that I am giving away today! In fact, every post in the next three weeks will have a book or product being given away to one of you! All you need to do is leave a comment below to enter.
Last year I reviewed Kelly's first book, The Spunky Coconut Cookbook. A year later, I am back with more praise for her second book! I love how nutritious and kid-friendly all of Kelly's recipes are. As the title describes, this book is grain-free, but also completely casein-free, soy-free, and refined sugar-free. Many of the recipes are also egg-free. If you are vegan or are sensitive to eating eggs then you will still find plenty of recipes in this book to suit your needs. This book also works well for diabetics and others with blood sugar metabolism issues.
Both of Kelly's books are filled with beautiful, color photos. My children like to sit down with the new book and page through it picking out all of the recipes they want me to make! They also think it's pretty neat that I wrote the foreword for her book. Below is one of our favorite recipes from her book, enjoy!

Grain-Free Coffee Cake
This recipe is moist and delicious to the last bite. I never dries out and is best kept in the fridge after the first day. I've made a few changes to it, mainly doubling the cinnamon in the topping and increasing the cooking time. All of her recipes take longer for me to bake. I think that might be because Kelly creates these recipes in a very dry climate at an altitude of above 5000 feet and I am at sea level in a very moist climate. Although her recipe indicates to bake this coffee cake for 25 minutes, it takes me 45 to 50 minutes until it is cooked all the way through. No recipe can ever be perfect because of all of the variables involved. Just check for doneness in the center of the cake after 25 minutes. Then you be the judge as to how much more time it needs. Note: you can view the original recipe on Kelly's website.
Wet ingredients:
2 cups cooked and drained white beans (at room temp)
6 large organic eggs
1/3 cup honey
1/4 cup melted virgin coconut oil
3/4 teaspoon liquid stevia
2 teaspoons vanilla
1 teaspoon almond flavoring
Dry Ingredients:
1/3 cup coconut flour
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon sea salt
Topping:
2 to 3 cups raw walnuts
1/2 cup coconut sugar
4 tablespoons coconut oil
2 tablespoons cinnamon
Preheat oven to 325 degrees F. Lightly grease a 9 x 13-inch glass baking dish.
Use an 11-cup or larger food processor fitted with the "s" blade. Add to it all of the wet ingredients. Process until smooth. Then add dry ingredients. Process again until very smooth and creamy.
Pour batter into prepared pan, scraping the sides of the processor with a rubber spatula. Then rinse the food processor to make the topping.
Place the walnuts, sugar, and cinnamon into the food processor and process until nuts are very finely ground. The add melted coconut oil and process again. Sprinkle topping over cake batter.
Bake for *25 to 50 minutes or until toothpick inserted in the center comes out clean. Source: www.NourishingMeals.com

ReplyDeleteI think I will make this for Christmas morning.

Hi Ali,
ReplyDeleteI've been following your blog for quite some time but never posted a comment. I have Kelly's original book and have utilized many of her recipes to the delight of my family. In addition to numerous food restrictions, I've been successful at cutting out 99% of the refined sugar from our diets. Would love to have a copy of Kelly's new book!
I so appreciate the time and effort you, Kelly and other health & nutrition-minded people put into sharing your wealth of knowledge!
Blessings,
Nancy
I would LOVE to win Kelly's newest cookbook. Thanks for a great giveaway!!
ReplyDeleteAs soon as I can get a hold of some coconut flour, I will absolutely make this. It looks delicious!

ReplyDeleteThat coffee cake looks delicious! I'm passing the recipe along to my gluten sensitive friends!
ReplyDeleteThat recipe does look delicious! Sounds like another great cook book to have!
ReplyDeleteSince I am lactose intolerant, gluten intolerant and hypoglycemic, this recipe will be perfect for me! I'll start to soak the beans tonight.
ReplyDeleteOkay, I must get Kelly's new book! It's been on my list, but I just haven't done it yet. You've inspired me with this healthy, grain-free breakfast "treat." This is my kind of coffee cake. I love the idea that it's not laden with sugar and other not-so-healthy stuff.
ReplyDeletePeace, love and healthy coffee cake!
Melissa
This looks so good! Considering going grain free as still having issues from going gluten free.
ReplyDeleteThis is wonderful! Especially for those of us who are intolerant of most grains. I cannot wait to try it out. Thank you for all that you do!

ReplyDeleteI have been waiting for this cookbook to come out with ants in my pants! After switching both my daughter and myself to a gluten free diet about two years ago we felt great for about 5-6 months...and then the more familiar I became with the flours and the tricks to make eating gluten-free (and dairy and soy free) delightful, the more I noticed our symptoms were creeping up again. I've found that we just have a tough time breaking down our carbs - and sugar has proven to be a detriment to us even in small amounts; The immune system just flat out revolts. I'm hoping to heal our guts through some suggestive diets and then, when we are ready, look out grain-free cupcakes!!
ReplyDeleteI'm thinking this will be a great treat to share at those Monday morning team meetings! I'd love to win Kelly's book; she always comes up with tasty recipes.
ReplyDeleteThat looks delicious! It's hard to find grain free baked goods without almond flour, so this is exciting for an almond-free diet.
ReplyDeleteCan you taste the beans? I made a black bean brownie recipe that did not go over well.
That cake looks wonderful! I only wish grain-free cakes and muffins didn't require so many eggs (husband can't have them). Oh well, at least there's cookies!
ReplyDeleteYum, love baking with white beans!
ReplyDeleteYum!! And thanks for this site and your book! As a recently gluten and dairy free mom it has changed my life. I don't feel like we're missing out at all. In fact, it may be the other way around!
ReplyDeleteThis looks great. I am always on the look out for treats that are not empty calories. I can not wait to make it. Kay

ReplyDeleteEJW
I have been using ground almonds and beans to make pancakes and we love them! Will order coconut flour to try this.
ReplyDeleteYUM! Looks awesome!
ReplyDeleteKelly
All of Kelly's recipes look amazing!
ReplyDeleteThis recipe looks great! I'm wondering how I can sub for 6 eggs though (my son is allergic to eggs) and the walnuts (I'm allergic to nuts). Is there a way to eat grain-free with those allergies?
ReplyDeleteMy husband is going to love this! Thank you! Karen
ReplyDeleteI made a marbled cake for my daughter's birthday with black beans in the chocolate part and white beans in the vanilla part. It was great - so moist! I bet this coffee cake will be the same and I look forward to trying it. Thanks!
ReplyDeleteI love Kelly's first book, and I would be thrilled to have her second book as well.
ReplyDeleteI would love to have this cookbook as my very first gluten/dairy/sugar free cookbook! Making these positive changes lately have totally changed my life and I can't wait to explore new recipes!
ReplyDeleteIm thinking these will be fairly easy to make & Im sure it wont take much adapting in taste from the usual sweets we eat. Trying to eat healthier. Thanx for sharing,
ReplyDeleteMicki
Thanks for offering the giveaway!
ReplyDeleteCant wait to try this recipe and think it would be awesome if I could win this book!
ReplyDeleteI'm making this tonight for my in-laws tomorrow in hopes of duping them into my "crazy" way of eating without even knowing it!
ReplyDeleteI would LOVE to win this! I have been holding out. We are new to GF because of my DD and thanks to Kelley I have my sanity back (meaning I can still make those cookies)!
ReplyDeleteI shared this on my Facebook! I wish I had twitter, but there are some things that I must resist. lol
ReplyDeleteI will make this the next time my daughter-in-law comes, as she doesn't eat wheat, dairy, or sugar and I'm often stumped for something yummy to serve her for a sweet. Thanks!
ReplyDeleteI follow both you and Kelly's blogs, and I love both equally!! I have Celiac Disease, and have chosen to not consume dairy as well, so Kelly's blogs would help me out a lot! Thanks so much!
ReplyDeleteTime to cook up the white beans. This looks incredible! I haven't yet seen her book. With recipes like these, I am off to Village Books tonight.
ReplyDeletethe cofeecke sounds delish. I can't wait to try it. MJM
ReplyDeleteOh YUM, that looks delicious Ali!
ReplyDeleteI can't wait to get a copy of Kelly's new cookbook, it's time for me to attempt grain-free baking, especially since I recently found out I am allergic to corn, OYE!
BTW, I have been making "Tom's Fruity Medicine Chest Smoothie" from your cookbook everyday for the past week and my kids actually LOVE it, so thank you, thank you, thank you!
xo,
Heidi
Looks delicious!
ReplyDeleteI am so excited to make this! I have vowed this Christmas season to make wonderful HEALTHY baked goods and treats instead of the usual suger. gluten filled ones. It makes me feel so great knowing that I will be giving so much more then just another baked good.
ReplyDeleteAli, that coffee cake is one of our favorites in our house. The only thing I change up from her recipe is that I use almond flour instead of coconut since my son tested to be slightly sensitive to coconut. I love how all of those eggs make it so spongy (I always use my neighbors fresh eggs from her Mom's chickens). What a healthy morning treat! It was what we just had onThanksgiving morning as well. What an awesome giveaway!
ReplyDeletexo
I really like the sweetener and fat profile of this recipe. I did (many, many years ago) make a pinto bean cake that was definitely a flop. White beans sound more promising.
ReplyDeleteSue
WOW, that cake looks great! I will try it once I am done with the elimination diet!
ReplyDeleteThis cake looks wonderful! We have been trying to go grain free, and I just got some coconut flour not too long ago. Looks like I need to get Kelly's books. I am wondering if I can substitute coconut palm sugar for the stevia. I have found that stevia is now giving me a headache every time I eat it. I don't like headaches. If you have any idea, please let me know.
ReplyDeletexoxo,
Tia
Most coffee cakes are not nutritious, but this one looks like one I would try.
ReplyDeleteThis looks so yummy! I think I'm going to make it tomorrow morning for some friends coming over for breakfast!
ReplyDeleteWe just made Kelly's vanilla bean cake and my kids LOVED it! I would love to get my hands on her new cookbook!

I am gearing up for the 28day elimination diet after the holidays. The recipes in your book and the site will really come in handy for that.
ReplyDeleteI'm so excited! Thanks for this wonderful oppurtunity Ali!
ReplyDeleteThis coffee cake was fantastic! I made it for Christmas day, and it was gone by the following morning. I left out the stevia, used maple syrup in place of honey, and used date sugar in the topping.... it was just sweet enough and really moist and scrumptious. Great recipe! Thanks, as always, for sharing!
ReplyDeleteI love bean cake recipes, this looks great. I plan on making this for New Years Day brunch. I could use this cookbook as I have a son w/ ASD ( who is getting better everyday w/ diet, detox, and supplements). I need all the great resources we can get! Thanks!

What an amazing delight to have such a wonderful composition of GREAT TASTING gluten-free recipes to offer those of us who have a difficult time weaning off the gluten!!
ReplyDeleteI would absolutely love to try out those great recipes starting with that gorgeous gluten free coffee cake - as this is one of my pitfalls into gluten eating! - Thank you for caring about the health & well being of your readers!
Well, I just turned this into chocolate coffee cake with the addition of Cocoa Powder and used plain, unsweetened coconut as the topping (We live in a nut-free house)
ReplyDelete
